WHAT YOU’LL NEED

45ml Tidal Rum
25ml Cointreau / Triple Sec
25ml Lime juice
15ml Orgeat
25ml Dark rum float

Garnish: lime wedge, orange wheel, sprig of mint and cocktail cherries

Glass: Short / Rocks


HOW TO MAKE THE MAI TAI

Ladies and gentlemen, boys and girls, meet the Mighty Mai Tai, a fantastic tropical drink. So you’re going to need plenty of ice in your shaker. And we’ll go straight in with 50ml of your favourite rum, all the way to the top. Then we’re going to go for 25ml of Triple Sec - you could if you wanted to, use Cointreau, but I’m using Curacao Triple Sec because it’s slightly drier and adds plenty of body. 


Then 25ml of your lime juice, straight in, and finally 15ml of Orgeat. Orgeat has a powerful flavour, it’s very almondy, so you don’t want to overdo it. Excellent! Close up your shaker, over to the small, then to the large and give it a good 20 shakes until it’s nice and cool. Beautiful! So the beauty about this drink is that you can make it quickly, we’re just going to dirty dump straight into the glass, just as it is. Then add a little more ice, and we’re going to garnish with a little slice of orange, and then a wedge of lime. And then put in a little bit of mint and just because we like it, a little bit of white lavender just to add something slightly different. 


Now that’s not finished yet, because the best thing about the Mai Tai is if you want to make it stronger than it already is - because remember, the only thing that’s not alcoholic in this is the lime and the Orgeat - you can top with a float of a little bit of dark rum, just a little. And that’s the tropical Mai Tai! 


And just to let you know a little bit more about the garnish, we’ve got a setting sun with the orange slice, we’ve got a little island which is the lime wedge, we’ve got a cherry just because we like a cherry and it’s a bit Tiki and then we’ve got some mint and some lavender there evoking a palm tree.

So there it is, the mighty Mai Tai, a fantastically powerful drink - enjoy it in the sunshine but make sure you don’t have too many of them!
